The inspiration for Jacarando Brut Sparkling was born from reading a book. Wine maker Claudio Quarta was in Mexico when, by reading the words by Pino Cacucci, he had the idea of producing a sparkling wine that was irreverent, “caciarone”, a sparkling wine that everyone would love and enjoy, but with a strong personality. He immediately brought his ideas straight to the cellar in Irpinia, the “North” in the South.
“Jacarando”: in Mexico, bright young, lively, a protagonist; “like the Jacaranda that when blooms become a noisy tree that attracts all the attention and puts in the background every other plant”.

TASTING NOTES
Bright pink, elegant and expressive, floral, small fresh red fruits. Fresh and balanced in the mouth, aromas of white peach, strawberries, cherries, golden apple, with a good finish on the palate.

THE MAKER: Cantina Sanpaolo
Cantina Sanpaolo is in a hilly area between the provinces of Avellino and Benevento, with a wide variety of soil types in the vineyards, ranging from clayey to chalky and sandy and influenced by the volcanic ash from the mighty volcano Vesuvius. The vines grow at altitudes up to 700 metres, and receive very intense sunlight during the day, while the temperatures drop quite dramatically at night, making the grapes even more aromatic.
The winery has modern equipment for producing whites and reds and for aging in the beautiful cellar containing 65 barrels of different sizes: barriques, tonneaus and oak casks.
