What makes a champagne?
By law a sparkling wine can only be labelled as champagne if it comes from the Champagne region of France.
Sparkling champagne was discovered by accident by 16th century monks. The extra pressure from the bubbles led to exploding bottles, so it was nicknamed “the devil’s wine”. Heavier glass bottles and clever cork design solved this.
